Using pump operated espresso machines

1. Fill the water reservoir with fresh water.
2. Switch on machine and leave for about 5 minutes, allowing it to reach operating temperature.
3. Place empty vessels under both steam nozzle and showerhead.
4. Bleed excess air from the boiler by opening the steam valve and switching on the pump until there is a steady flow of water from the nozzle.
5. Switch off the pump and close valve immediately.
6. Fill the coffee basket with about 7g of freshly ground coffee, of the correct grind, per cup.
7. Tamp down coffee, lightly but firmly. Be careful not to over compact as the water will not flow through the ground coffee properly.
8. Lock the coffee holder on to the showerhead.
9. Place cup(s) under coffee holder and switch on the pump.
10. When cup(s) are full, switch off the pump.
11. Remove cup(s).
12. Remove coffee holder immediately.
13. Sit back and enjoy.

Using lever operated espresso machines

1. Fill the water reservoir with fresh water.
2. Switch on machine and leave for about 5 minutes, allowing it to reach operating temperature.
3. Place empty vessels under both steam nozzle and showerhead.
4. Bleed excess air from the boiler by opening the steam valve. A very small jet of sub-steam water will escape, it will then start to spit and steam.
5. Close the steam valve immediately.
6. While you carry out the next steps, the machine will reheat, reaching optimum operating temperature and pressure.
7. Fill the coffee basket with about 7g of freshly ground coffee, of the correct grind, per cup.
8. Tamp down coffee, lightly but firmly. Be careful not to over compact as the water will not flow through the ground coffee properly.
9. Lock the coffee holder on to the showerhead.
10. Place cup(s) under coffee holder and slowly pull lever partially to the open position.
11. Once the first few drops of coffee liquor are released into the cup(s), pull the lever to the fully open position.
12. When cup(s) are full, pull the lever to the fully closed position.
13. Remove cup(s).
14. Remove coffee holder immediately.
15. Sit back and enjoy.
